Grab & Go Recipes

You will need:

  • A medium/large eco friendly or glass container or bowl
  • For measurements/cutting: a teaspoon/tablespoon and a knife

(the following recipes are based on products sold on Sainsbury’s Supermarkets)

Breakfast

Avocado Boats

Step 1 – Remove the middle bit of 1 avocado to open a hole

Step 2 – Fill in the hole with 1 smashed cooked egg and a teaspoon of pumpkin seeds, add a pinch of black pepper and pink himalyan salt/cornish salt and a squeeze of lemon

Step 3 – mix everything up

Step 4 – Eat the filling and the remaining avocado

 

Smoked Salmon Open Bread

(smoked salmon can be replaced by cooked eggs)

2 Sorghum, quinoa & rice cakes or 2 Rivita Quinoa and Sesame crispbreads

Step 1 – put half of a slice of smoked salmon in each cake or crispbread

Step 2 – add 1 handful of washed watercress spread across each cake or crispbread

Step 3 –  squeeze some lemon juice over the smoked salmon and a sprinkle of dried chives

Step 4 – Add one half cooked beetroot ball on each cake or crispbread

Breakfast Egg Bowl

Mix all the following contents into a bowl or container:

  • 2 cooked eggs
  • 1 handful of washed spinach
  • 1 cooked beetroot ball sliced
  • 1 teaspoon of pumpkin seeds
  • 1 handful of watermelon cubes (fruit snack packs)

Fruit Medley 

Mix all the following contents into a bowl or container:

  • 1 handful of mixed berries (blackberries, raspberries and blueberries)
  • 1 teaspoon of mixed seeds, cranberry and goji berries (Sainsbury’s own mix)
  • 1 small pot or 3 tablespoons of coconut collaborative natural yogurt or natural Fage probiotic live yoghurt/goat’s yoghurt (dairy option)
  • Half handful of almonds

Mains

Avocado Chicken Salad

Mix the contents in a bowl or container for a summery & delicious salad!

  • 1⁄2 Avocado
  • 1 pack of chargrilled chicken breast slices (this can be replaced by turkey breast slices) 
  • 1 handful of washed watercress / 1 handful of washed spinach
  • 1⁄2 lemon squeezed
  • A sprinkle of pumpkin seeds
  • A pinch of black pepper
  • A drizzle of organic balsamic vinegar

Omega-3’s Super Salad

Mix the contents in a bowl or container for a Omega-3’s boosting salad

  • 1 pot of 2 cooked eggs – grab & go section
  • 1 tin of sardines or mackerel in olive oil (please use the olive oil in the tin as dressing for the salad)
  • 1 handful of washed rocket
  • 1 handful of washed watercress 1 handful of cherry tomatoes
  • A sprinkle of pumpkin seeds

Chicory Anchovy Salad

Mix contents into a bowl or container.

  • 1 handful of red chicory leaves or 1 entire red chicory
  • 5 radish sliced into halves
  • 1 tin of anchovies in olive oil (use the olive oil as a dressing for the salad) 1⁄2 of a cup or 6-8 tablespoons of Merchant gourmet cooked puy lentils
  • 1⁄2 handful of chopped walnuts
  • 1⁄4 of lemon squeezed

Quick Prawn Courgetti

Mix the contents in a bowl or container:

  • Half a pack of already made courgetti (you can replace it with butternut squash noodles)
  • Half a pack of cooked and peeled prawns
  • 1⁄2 avocado
  • A pinch of black pepper
  • Sliced red pepper (half)
  • A drizzle of olive oil
  • A handful of raw walnuts

Falafel Delish Wrap

Wrap everything up et voila!

  • 1 tablespoon of beetroot hummus or chickpea hummus cooked in olive oil
  • 4 chickpea falafels
  • 1 handful of washed spinach or a couple of leaves of crunchy iceberg lettuce
  • 1 Quinoa and chia seed/sweet potato wrap or free from tortilla wrap
